Spinach Chickpea Egg Nest by Food Heaven Made Easy

A beautiful aspect of food and nutrition is supporting others and their recipes. We all have food knowledge; it’s an integral part of the human experience.  A few months ago I came across  Food Heaven Made Easy that is managed by a team of US dieticians who happen to be best friends living on opposite coasts, California and the Bronx, NY. With their backgrounds in dietetics and advance degrees in nutrition, not only have they allowed me to share this delicious recipe, but they know their stuff when it comes to the breakdown of the foods we eat. Here’s a great addition to any morning routine that combines healthy eating with delicious. Enjoy!

Serves 2
  1. 1 tablespoon olive oil
  2. 1/4 onion, chopped
  3. 2 cloves garlic, mined
  4. 2 cups spinach
  5. 1/2 cup cooked chickpeas
  6. 1/2 cup tomato sauce
  7. 2 eggs
  8. Salt & pepper to taste
  1. On a pan or skillet, heat the olive oil and add the onion and garlic. Sauté for 1 minute over low-medium heat
  2. Then add the spinach, and sauté with the onion and garlic until it wilts- about 1 minute
  3. Add the chickpeas and tomato sauce to the pan, and cook together for 3 minutes over low-medium heat, with the lid on
  4. Next you’ll crack your eggs and allow them to cook without the lid for 5-6 minutes or until the desired doneness is reached
  5. Enjoy with salt and pepper, to taste
