I made these this afternoon after an early morning bike ride to and from a meeting downtown, and a couple hours before biking to a second meeting across town. Healthy fats and protein is such a good source of sustainable energy during a busy day and a great way to avoid an energy slump. These ended up delicious (hugely important), and contain plant-based omega 3’s, omega 6, fiber, minerals and a complete blend of protein. Here’s the recipe!
Peanut Butter Banana Protein Bites
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup coconut flakes
1 TBS peanut butter
1 spotty banana, mashed
1 scoop of vanilla Vega plant-based sports protein (vanilla works best but chocolate is great as well. The photo has half vanilla and half chocolate)
*added probiotics if available
1/8 cup water (a little less than 1/4 cup if you don’t have a 1/8 cup)
- Mash banana and add to a mixing bowl. Add all other ingredients except liquid.
- Mix all ingredients together then slowly add water while mixing. You will have a mixture a bit dryer than cookie dough.
- Roll into small balls. You should have 12-15 bites in one recipe.
