No Bake Chocolate Pie

Filling/ Frosting:

1 cup of pitted dates ( could also use any locally grown dried stone fruit)
1 pinch of sea salt
1/2 cup water
2 Tbs Fair Trade Cocoa
1 1/2 Tbs coconut oil
2 1/2 Tbs coconut milk

  1. Blend ingredients in a blender until smooth and chill in refrigerator until ready to use.

Pie Base:

1 cup almonds, chopped
1/2 cup dried fruit, chopped

2 Tbs sesame seeds

  1. Mold ingredients together until it sticks together, and roll into a large ball. Place ball on small pie pan or 8×8 pan, and press pie base across the service until the pan is evenly covered.
  2. Remove filling from the refrigerator and spread evenly unto the pie base. There should be about 1/2 an inch of filling spread across your pie.
  3. Sprinkle with nuts or seeds and place in fridge until ready to serve.

Simply a healthier option for anyone with a sweet tooth, this recipe uses whole foods that taste great, are nutrient-dense, and contain healthy fats, protein and fiber to counteract the sugar content found in the dried fruit. The fact that these ingredients are minimally processed increases their propensity of having note-worthy amounts of minerals and vitamins, which are also important for proper digestion and how the body uses energy from food.
